COSTA TOSCANA IGT VERMENTINO
\n\nGrape Variety: Vermentino
\n\nSoil: marine sands within the Villamagna formation, well-draining and limestone-rich, abundant in fossilized shells.
\n\nExposure: south
\n\nVinification and Aging: the finest selected grapes are destemmed, crushed, and briefly macerated at low temperatures. Subsequently, gentle pressing occurs. The must is left to settle cold for a week. Following this, a portion ferments in Cocciopesto amphorae and the remainder in stainless steel. Fermentation takes place for two weeks at a temperature of 18°C. At the end of fermentation, the wine is cooled, followed by periodic bâtonnage. Finally, the lots are blended and aged in stainless steel until bottling.

\n\nGrape Varieties: Vermentino, Viognier, Petit Manseng
\n\nSoil: the grapes come from two parcels within the Villamagna formation. One is mostly sandy and well-draining, while the other, situated higher up, is more clayey with higher limestone content and abundant fossilized shells.
\n\nExposure: south and southwest-facing
\n\nVinification and Aging: the finest selected Vermentino and Viognier grapes are destemmed, crushed, and briefly macerated at low temperatures. After gentle pressing, the must is fermented in new french oak barrels. Periodic bâtonnage follows after fermentation. The selected Petit Manseng grapes, on the other hand, undergo vinification in stainless steel. The lots are then blended and aged in Cocciopesto amphorae until bottling.

\n\nGrape Variety: Sangiovese
\n\nSoil: clays and marine sands within the Villamagna formation, rich in limestone and fossilized shells. The skeleton consists of sandstone rocks and limestone pebbles.
\n\nExposure: southwest-facing
\n\nVinification and Aging: grapes from selected parcels are destemmed and gently crushed. Fermentation and maceration take place in open wooden vats at controlled temperature for approximately 20 days. During this period, targeted punching down and délestage are carried out. Following malolactic fermentation, a small portion of the mass is transferred to French oak barrels, while the remainder continues aging in wooden vats for 12 months.
