The blend is created from four separate parcels all planted exclusively with Sangiovese. Among these, the small-berried clusters are particularly selected, considered fundamental in the production of this wine. The vineyards included are Saggio Etrusco, Santandrea, Mostricce di Sotto and Poggiale. Each of them is distinguished by its characteristics and contribution to the final wine.
Among the various parcels, the more calcareous and sandy soils, rich in rocky fragments and gypsum from Saggio Etrusco provide depth and vertical structure to the wine, while Poggiale, the vineyard closest to the village of Montefoscoli, imparts roundness to the blend and a more immediate aromatic component in the young wine thanks to its clay-marl soils.
Within each parcel, agricultural practices are differentiated and adapted based on the terroir and the vintage’s progression to best express the character of each one.
The grapes are then vinified separately in open oak vats and terracotta amphoras. Not pressed and handled gently during fermentation, the grapes are then submerged in the wine during long macerations. Aging always takes place in non-new wood and terracotta to respect the product to the fullest.
