The uniqueness of Montefoscoli’s terroir is the subject of our daily study, and we have the burden and honor of telling its story. According to our vision, what gives wine its inestimable value is not only its taste, but the uniqueness and unrepeatable nature of the context in which it is born. What distinguishes Montefoscoli is the place, the people who have always cultivated it, and its soils.
In the vineyard, we work to preserve biodiversity from every point of view. Interventions are aimed at providing protection to the plant while also promoting its natural vigor in defense.
The soils are worked at most twice a year, avoiding the hottest periods and with the objective of reestablishing balance and planting cover crops. Weed control is done exclusively mechanically and manually, avoiding extreme insistence to limit soil compaction. Great attention is paid to finding the plant’s balance, modulating the load and structure of the leaf wall based on the season’s progress.
In the cellar, the grapes arrive only at the moment of total ripeness where they are vinified according to traditional methods. The complexity and expressiveness of each individual plot is preserved through delicate and long infusions on the reds and prolonged periods on the lees for the whites.
